Gesundheitsrisiken durch Milchkonsum

Eine kritische Bewertung aus ärztlicher Sicht

Zusammenfassung

Hintergrund: Aktuelle Ergebnisse epidemiologischer Untersuchungen bringen vermehrten Konsum von unfermentierter Kuhmilch, nicht aber von fermentierten Milchprodukten, mit einem erhöhten Risiko westlicher Zivilisationskrankheiten in Verbindung.
Fragestellung: Darstellung des epidemiologischen und pathophysiologischen Erkenntnisstandes zu möglichen gesundheitlichen Risiken durch Milchkonsum.
Methode: Selektive PubMed-Recherchen der Jahre 2005-2020 unter Berücksichtigung epidemiologischer Studien mit differenzierter Analyse von unfermentierter versus fermentierter Milch und deren mögliche Gesundheitsrisiken.
Ergebnisse: Epidemiologische Studien belegen einen Zusammenhang zwischen Milchkonsum und Geburtsgewicht, pubertärem Längenwachstum, Acne vulgaris, Diabetes mellitus Typ 2, Prostatakarzinom, Mammakarzinom, hepatozellulärem Karzinom, Non-Hodgkin-Lymphom, Morbus Parkinson und Gesamtmortalität. Im Vergleich zu Frischmilchkonsum weist der Verzehr fermentierter Milchprodukte dagegen neutrale bis protektive gesundheitliche Effekte auf, die durch die Abschwächung der mTORC1-aktivierenden Signalfunktion der Milch infolge bakterieller Fermentierung erklärbar sind.
Schlussfolgerungen: Langjähriger und kontinuierlicher Konsum unfermentierter Milch, nicht aber der Konsum fermentierter Milchprodukte, kann das Risiko häufiger Zivilisationskrankheiten erhöhen. Der Verzicht auf Milch, insbesondere auf pasteurisierte Frischmilch, könnte einen Beitrag zur Prävention und Rezidivprophylaxe häufiger westlicher Zivilisationskrankheiten leisten.
