In diesem Kapitel aus der Neuauflage des "Weißbuch Allergie in Deutschland" beleuchten die Autoren vom Bundesinstitut für Risikobewertung (BfR) die geltenden Vorschriften zur Kennzeichnung von Allergenen in Nahrungsmitteln. Für Menschen mit Lebensmittelallergien ist die klare Kennzeichnung der in Produkten enthaltenen Zutaten und Inhalsstoffe ein wichtiges Kriterium bei der Kaufentscheidung.
