In addition, anserine and carnosine have been proposed to play additional roles in controlling enzyme activity, inhibiting oxidative reactions, and as neurotransmitter (Boldyrev, 2001; Boldyrev & Severin, 1990). Anserine decomposes into its constituents β‐alanine and 1‐methylhistidine by hydrolysis.
