Early studies demonstrated enhanced DNA replication and regeneration of β-cells when rats were treated with epicatechins [160–162]. Studies using quercetin (a flavonol, also found in cocoa) in the STZ-treated rat diabetes model demonstrated maintenance of β-cell mass, which could indicate decreased cell death or enhanced proliferation [153,154].
